April is my birthday month and as the saying goes: “birthday month, cook whatever you want”. Ok, I made up another proverb, but it makes sense, doesn’t it?
I have been following this mantra all month long, so get ready for more tasty recipes! No, seriously, I was all over the place food wise, but it was simply too good, so no regrets xD
Today’s recipe is one of my favorite dish ever: Jamaican Oxtail with Rice and Peas.
The first time I have ever had authentic Jamaican Oxtail was in… Texas. Yes, not Jamaica, London or Toronto, but in Austin TX. As some of you may know, Austin is the capital of food trucks, so you can imagine how happy I was to spend my senior year studying abroad at the University of Texas xD
I tried many food trucks during my time there but nothing beat Gemma Love’s Jamaican food truck! The bussiness has unfortunately closed a few years ago, but I’m glad to know that I had a chance to try the most moist, flavorful Jamaican oxtail ever!
Even in London, known for its large Caribbean comunity, you can’t find anything on that level.
Well, I tried my best to recreate the magic of Auntie Gemma, so I hope you will enjoy this recipe 😀
Oxtail can be enjoyed with white rice, rice and peas, roti and/or fried plantains; I went for rice and peas because I was craving some and well… “birthday month, cook whatever you want”!

Jamaican Oxtail and Peas with Video

- Green Seasoning
6 Garlic cloves
1/2 Onion
1/2 Green onion
3cm Ginger
30g Fresh Cilantro
15g Fresh Parsley
1 Scotch pepper or Pimento pepper
Thyme
1 tablespoon salt
Water, if needed, to blend
- Marinade
4 tablespoons Green seasoning
3 tablespoons Soy sauce
2 teaspoons Jerk seasoning
3 tablespoons Ketchup
1 teaspoon Adobo seasoning or stock cube
- Oxtail
1,5kg Oxtail
1 tablespoon Sugar
1,25L Hot water
1 Bay leaf
1 sprig Thyme
1 Red bell pepper
½ Green bell pepper
200g White beans (canned)
Directions
- Blend all the ingredients of the Green seasoning.
- Wash your meat and pat dry.
- In a large bowl, add the ingredients of the marinade.
- Mix well, cover and place in the refrigerator for at least 3 hours.
- Take meat out of the refrigerator and set aside.
- In a large hot pan, add in the sugar. Stir until it caramelizes and turns dark brown.
- Add in the meat. Stir and let it brown on both sides.
- Add in water, until meat level. Cover and cook until almost absorbed.
- Add in thyme, bay leaf and rest of the water, until meat is covered. Cover and cook on medium until the meat is fully tender.
- Add in the peppers and beans. Cover and cook 10 minutes.
- Uncover and cook until the sauce has thickened.
- Serve with rice and/or plantains.
