Flaky Jamaican Beef Patties with Video

As the year draws to a close, it’s time for the very last recipe of 2023: Jamaican Beef Patties!

A Caribbean staple, patties are a must try if you have never tried Caribbean food, they can be found in any Jamaican takeaway. They can be eaten as a snack or as an appetizer (I eat them for breakfast as well, don’t judge me).

Variations of patties can be found in different cultures around the world; “empanadas” in Central and Latin America, “pastels” in West Africa and so on.

What makes Jamaican beef patties different is the mixture of spices in the filling and the ingredients in the crust, which gives them their characteristic yellow color.

Flakiness! Jamaican beef patties are made with a short crust that should be both flaky and slightly greasy (from the butter). This texture allows the patties to be refrigerated or frozen and later reheated without compromising the experience of a fresh, hot Jamaican beef patty.

Jamaican beef patties are yellow: the yellow comes from the turmeric and curry powder. You can use either, but I prefer to use both.

The filling

This is a recipe for Jamaican beef patties, so obviously, I will be using minced beef, but you can use other meats or even fish. Popular flavors are: chicken, goat (my favorite after the beef) and saltfish.

I use the browning sauce to give the filling a darker color as well as a mildly sweet taste, with the ketchup lightly offsetting the sweetness.

I mentioned meat and fish, but patties can be vegan too. You can use beans, tofu or lentils for the filling. I have a recipe for vegan patties here on the blog.

This recipe should make 12-15 patties depending on size. They will keep in the fridge for up to four days. They can also be frozen for up to a month: to be honest, they have never lasted more than 2 weeks in my freezer as I always end up eating them all. 

They can be heated in the microwave or, for better results, in an air fryer or traditional oven.

Ingredients

  • Pastry
  • 450g Flour

  • ½ teaspoon Sugar

  • 1 ½ teaspoon Salt

  • 1 teaspoon Curry powder

  • ½ tablespoon Turmeric powder

  • 150g Butter (cold)

  • 100g Margarine (cold)

  • 250g Water (ice cold)

  • +n1 Yolk

  • 1 tablespoon Water

  • Filling
  • 2 tablespoons Vegetable oil

  • 700g Beef (minced)

  • 3 stalks Green onions (minced)

  • 1 Onion (diced)

  • ½ Green pepper (diced)

  • ½ Red pepper (diced)

  • 4 Garlic cloves (minced)

  • 5cm Ginger (grated)

  • 2 tablespoons Ketchup

  • 1 teaspoon All-spice

  • 1 teaspoon Paprika

  • 2 teaspoons Curry

  • 2 teaspoons Thyme

  • 2 teaspoons Salt

  • 400g Vegetable broth

  • 1 tablespoon Browning sauce

  • 2 tablespoons Breadcrumbs

Directions

  • Pastry
  • In a large bowl, add the flour and spices. Stir.
  • Rub in the butter and margarine.
  • Add the water. Work the dough until combined.
  • Split in half, cover in plastic and place in the fridge.
  • Filling
  • Heat oil in pan and add onions and red peppers. Sautee for 5 minutes until soft.
  • Add garlic, ginger and green onions. Stir and cook for 3 minutes.
  • Add spices and beef. Stir and cook until it starts to brown.
  • Add browning, ketchup and stock. Cook for 10 minutes.
  • Add in breadcrumbs and cook until there is no more liquid.
  • Set aside and let cool down.
  • Patty
  • Preheat the oven to 190°C.
  • Cover a baking sheet with parchment paper.
  • In a small bowl, whisk the egg yolk and the water until smooth.
  • Remove the pastry from the fridge.
  • Roll to 1/2 cm in thickness. Using a small bowl, cut circles into the pastry.
  • Add in the 1 ½ or 2 tablespoons of beef filling in the middle of the circle
  • With your index or a small brush, brush the outer circle with the yolk/water mix.
  • Fold pastry over the filling to form a semicircle and use a fork to press the edges together.
  • Brush the patties with the yolk/water mix.
  • Place the patties on the baking sheet and bake for 20 minutes.
