Hello There ! Hello June !
I hope you are all doing amazing : the Sun is « Sunning » and “we’re outside” season has officially started.
The countdown to the Summer Body has almost come to an end, so, if you, like me, have chosen comfort belly over sculpted belly, this recipe is perfect you.
(And if you’ve managed to achieve your fitness goals: stay here and enjoy this snack).
Today’s recipe is: Fried Shrimp with Spicy Mango Mayo.
My family is originally from Cameroon which name was given by Portuguese colonizers (Camarões) who marveled at the amount of “camarões” (shrimp) in the river. All of this to say that I’m genetically predisposed to love shrimp, so expect shrimp recipes at least once or twice a year.
The recipe
Now, on to today’s recipe: fried shrimp is SO easy to make!
The steps are:
- Season the shrimp (use raw shrimp to make sure it absorbs the flavor)
- Season the flour
- Combine the two
- Fry
- Eat
It’s truly a fail proof recipe. Perfect as an appetizer, a brunch dish or a filling snack, you will love it.
Mango Mayo
I decided to pair this fried shrimp with a spicy mango mayonnaise; to be fair, you could also serve this fried shimp by itself with a drizzle of freshly squeezed lemon juice, but the mayo adds that little je ne sais quoi. To make it even fancier, I added fresh mango, hot sauce and cumin, to bring a sweet and spicy kick to it.
Totally optional, you can also pour a little butter-lime sauce over the shrimp if you’re really looking for a post-meal nap. I added the measurements below.)
You can serve this with a nice salad, french fries or, my favorite, fried green/yellow plantain.
