These super easy and delicious Cinnamon Roasted Plantains are exactly what you were looking for!
Roasted plantains are enjoyed as street food in many countries across the African continent and the Caribbean. Plantains in general are enjoyed in these regions in different forms: mashed, stuffed, roasted, boiled or fried.
When paired with sugar and cinnamon, plantains are usually fried or oven roasted. I decided to put a twist to the usual oven roasted recipe by adding ginger and lime to the mix: I love the contrast between the sweet flavor of the sugar, cinnamon and nutmeg against the tanginess of the lime.
Count 1 banana per 2 people, or 1 each if you’re particularly gourmand, like moi xD
I also recommend using not overly ripe bananas: the plantain should be yellow yet firm, so that they don’t become too mushy in the oven, plus they would be too sweet.

Oven-Roasted Lime and Cinnamon Plantain

2 medium-ripe (yellow, but firm) Plantains
1 tablespoon Brown sugar
2 tablespoons Olive/Vegetable Oil
½ teaspoon Cinnamon powder
½ teaspoon Nutmeg powder
3cm Ginger (grated)
Zest of 1 Lime
Juice of 1 Lime
Directions
- Preheat oven at 180°.
- Line an oven tray with parchment paper.
- Peel and slice the bananas.
- In a bowl, mix the rest of the ingredients.
- Brush the bananas with the wet mix.
- Place the banana on the tray.
- Bake for 10 minutes.
- Flip the bananas, brush with a bit of wet mix.
- Bake for another 5 minutes.
- Eat with freshly squeezed lime juice.
