I’m back with a brand new recipe: Vegan Sweet Potato Peanut Butter Brownies.
Sweet Potato. Peanut Butter. Chocolate… Boom! That’s all you need to you know… well kind of.. I mean, you probably want the recipe otherwise you wouldn’t be here, right? xD
Now let’s talk about it.
This is THE fail-proof Brownie recipe: no need to worry about crazy cooking tricks or 148392 steps, this recipe is simple and straightforward.
What makes THESE brownies special? Sweet Potato.
Using sweet potato allows us to cut down on the sugar while absorbing great nutrients such vitamin A, vitamin C and Magnesium. #WeStan #WinWin
THESE brownies are also rich in Protein, Iron and Potassium making them a great choice for a pre or post-workout snack.
In other words: they’re great and you need to bake them asap, thank me later xD
For these recipe, I used creamy-ish peanut butter: I personally would not recommend using too-chunky peanut butter if we want to keep them as moist and fudgy as possible.
I also used oat flour but almond flour, or wheat flour, work just as fine.

Vegan Sweet Potato and Peanut Butter Brownies

Ingredients
190g cooked Sweet Potato (≈330g raw)
220g Peanut Butter
85g Maple Syrup
35g Oat Flour (or Almond, Wheat…)
30g unsweetened Cocoa Powder
2 teaspoons Vanilla Extract
½ teaspoon Baking Soda
¼ teaspoon Salt
Brown Sugar (optional, to taste)
Directions
- Line a pan with parchment paper.
- Pick the skin of the sweet potato.
- Cook covered in a microwave for 5 minutes.
- Peel and mash the potato.
- Preheat the oven to 200°.
- In a bowl, add the peanut butter, mashed potato, vanilla extract, maple syrup and salt. Mix well until smooth.
- In a bowl, mix the flour with the sugar, cocoa powder and baking soda.
- Add the dry mix to the wet mix. Stir well.
- Pour the mix onto the lined pan. Press the dough with a spatula or use parchment paper and press with your hands.
- Bake for 20-23 minutes at 180°, until a toothpick comes out mostly clean.
- (Optional) Add a coat of melted peanut butter and cocoa on top of the brownie and sprinkle with nuts and seeds.
Your ingredients don’t mention sugar but your method does? How much sugar? I took a guess and added 100g?!

i’m a little confused. In the ingredient list it does not list any sugar, only maple syrup. But in the directions it mentions mixing the sugar in with other ingredients. Help I’m right in the middle of it! I need to make these brownies today for my granddaughters birthday help! Claudia
