Vegan Banana and Oats Snack Cake (Gluten Free)

Yes, you read correctly, today I’m bringing you the most common recipe ever: Vegan Banana Snack Cake aka Banana Bread’s younger sister! xD No, seriousy, how many recipes of banana bread could there be out there? 28.500.000! Yes, I checked. So you might be wondering, how is mine different from any of those? Uhmm, it’s not. (Kidding, I’m kidding!)

For starters, this one is vegan: it’s made with one of my all-time favorite ingredients… oats! Why do I love oats? I like the texture of the oats and I like how easy they are to incorporate to every sweet recipe thanks to their neutral taste. I prefer to process the oats in a blender versus using oats flour simply because I like to feel the slight crunchiness of the oats when I eat banana bread.

This recipe is also refined sugar free: I used dates, yay!

Dates are often critized for their high sugar content but when consumed in moderation they are actually a great substitute for processed sugars: they are rich in B6 vitamin, iron fiber and potassium. In other words, dates make you feel fuller, they help you build muscles and are great for your bones… How cool is that?

I know that “traditional” banana breads usually call for pecan nuts, but I prefer to use pistacchios: not only they contain less fats and more protein than pecans, but… there’s no but, I just like to throw some pistacchios in the mix whenever I can. XD

Vegan Banana and Oats Snack Cake (Gluten Free)

Easy, healthy, vegan and gluten-free banana snack.

Ingredients

  • 200g Rolled Oats

  • 10-11 Pitted dates

  • 3 medium sized ripe Bananas (mashed)

  • 75g Vegetable oil

  • 1 teaspoon Baking powder

  • ½ teaspoon Baking soda

  • 1 pinch Salt

  • 2 teaspoon Cinnamon

  • 2 teaspoon Vanilla extract

  • ¼ cup Cocoa powder

  • ¼ cup Pistachios (or Pecans)

Directions

  • Preheat oven to 180 C°.
  • Remove the seeds and soak the dates in hot water for 20 minutes, then drain.
  • Grind the oats using a blender.
  • Mix the dry ingredients in a bowl: oats flour, baking powder, baking soda, cinnamon, salt, cocoa powder.
  • Mash the bananas with a fork.
  • In a food processor, add the dates, vanilla extract and oil.
  • Combine the dry and wet mixtures and the mashed bananas. Do not over-mix.
  • Crush the pistacchios and add to the batter.
  • Pour the mix into the pan and cook in the oven for 45 minutes at 180C°, until a toothpick comes out almost clean.
