I was scrolling through the blog a few weeks ago and realized that I had never posted a recipe with fish (this recipe with Norwegian smoked salmon doesn’t count), so it was only right for me to make one. Now, as you may have seen on social media, everybody and their mama have been cooking salmon lately: garlic salmon, air-fryer salmon, salmon cakes, salmon mac & cheese, honey salmon, whatever salmon… so, yeah, I jumped on the bandwagon (don’t judge me, ok? lol).
Today’s recipe is: Garlic Herb Mashed Potatoes with Lemongrass Salmon.
This is 100% comfort food territory.
You can’t really go wrong with fish and mashed potatoes honestly lol I still had to spice things up by adding the lemongrass marinade and I love how fancy it sounds *flips hair*
The Marinade
If you are new here you probably don’t know this but I looove Green seasoning and I use it whenever I can as a base for my marinades (check my Jamaican Oxtail recipe); and this recipe was no exception.
I added brown sugar, lime and, of course, lemongrass to get that spicy-sweet-sour taste I was going for. I rubbed it into the salmon and let it sit for about 30 minutes. You can use this mix with every cut of fish and let it sit even longer to be sure that the marinade gets thoroughly absorbed.
The Garlic-Herb Mashed Potatoes
Ok, not to toot my own horn, but these potatoes right here!? Fire! Bomb! Period! (… Or whatever the kids say these days). They’re super easy to make but oh so flavorful.
The secret? First, cook the potatoes with different herbs.; finally, do not be stingy with the garlic nor the butter!
I prefer roughly mashed potatoes over the silky/velvety ones, but you’re free to adjust the texture to your liking.
The Garlic Lemongrass Sauce
More Garlic! More Butter! More Lemongrass!
The finishing touch: as you can see in the main photo, I laid a coat of mashed potatoes, topped it with salmon, freshly cut chives and THE garlic lemongrass sauce. This step will take this dish to the next level!
Picture this: you take a spoonful and you taste the texture of the garlicy-herb potatoes, the sweetness of the salmon and, to top it off, the warmth of the lemongrass-flavored buttery sauce. *drools*

Garlic Herb Mashed Potatoes and Lemongrass Salmon

- Salmon
300g Salmon
1 Lime (zest)
2 tablespoons Green seasoning
1 tablespoon Brown sugar
1 stalk Lemongrass
Salt & Pepper
1 teaspoon Olive oil
- Garlic Lemongrass Sauce
10g Butter
1 stalk Lemongrass
3 Garlic cloves (sliced)
- Mashed Potatoes
500g potatoes (peeled and cut)
1 sprig Rosemary
5 sprig Sage leaves
2 sprigs Thyme (fresh)
60 g butter
7 Garlic cloves (sliced)
½ tablespoon Nutmeg powder
1 teaspoon Salt
¼ teaspoon Pepper
2 stalks chives (chopped)
100ml Cream
50ml Whole Milk
Directions
- Salmon and Garlic Lemongrass Sauce
- In a large bowl, add in salmon, sugar, green seasoning, salt and lime zest. Stir, cover and let sit 30 minutes.
- Heat oil in a large frying pan. Drain the salmon and place it in the pan. Set the remaining marinade aside.
- Cook salmon on both sides until lightly golden. Do not overcook.
- Remove the salmon and set aside.
- In the same pan, add garlic, lemongrass and butter. Cook until light brown.
- Using a strainer, strain the sauce into bowl.
- Mashed Potatoes
- Place potatoes and herbs into a large pot.
- Cover with water, cover the pot and bring to a boil.
- Once boiling, uncover and cook until the potatoes are completely tender.
- Drain potatoes, remove herbs and set aside to cool down.
- Mash the potatoes until desired texture.
- In a large pot, add butter and garlic. Melt the butter and sauté the garlic for 2 minutes.
- Add potatoes and stir.
- Add cream, milk, nutmeg, chives, salt and pepper. Stir until creamy texture. Adjust with salt if needed.
