After many savory recipes, it was only right I wrote a sweet one.
Today’s recipe is Coconut Fonio Porridge!
The perfect breakfast or brunch recipe: this porridge is not only tasty but extremely nutrient-rich and gluten-free.
Fonio
Not many are, unfortunately, familiar with this African “super grain”.
This gluten-free grain is mostly found in Western Africa and Cameroon under the name of Fonio, Petit Mil or Acha.
As previously stated, it’s rich in nutrients: it helps with diabetes management, it is a so-called “energy food” as it contains a high percentage of fiber, which helps preventing digestive problems, and iron, which is great if you, like me, are anemic.
Porridge
What I like most about porridge is its versatility: you can virtually anything from your pantry and it will taste good lol
I decided to use coconut milk, for the texture and coconut flakes as well as chestnut for the topping.
Feel free to add fresh and/or dried fruit if you wish, but also honey or agave syrup for extra sweetness.

Fonio Coconut Porridge

- Porridge
200g Fonio
350g Water (warm)
½ teaspoon Salt
450ml Coconut milk (warm)
½ tablespoon Brown sugar
¼ teaspoon Cinnamon powder
½ teaspoon Nutmeg powder
½ teaspoon Vanilla extract
- Topping
2 tablespoons Margarine (or Vegan spread)
1 tablespoon Sugar
1 tablespoon Coconut powder/flakes
Directions
- In a saucepan, add the fonio, water, sugar and salt. Stir, cover and simmer for 5-7 minutes.
- Once the water has been absorbed, turn off the heat.
- Slowly stir in the coconut milk.
- Add the nutmeg, cinnamon and vanilla.
- Pour the porridge into separate bowls.
- In a small saucepan, melt the margarine, add in the sugar and stir until brown.
- Pour over the fonio.
- Sprinkle with coconut flakes.
