Hello There!
Another day, another sweet potato recipe! In case you missed it, check my Sweet Potato Salad recipe.
Today, we’re ditching tomatoes and rocket salad and we’re loading up on flour, cheese and bacon (…so, calories? lol) with this (very) Cheesy Sweet Potato and Bacon Flatbread.
This recipe is major “Comfort Food Territory”, perfect for a TV night or a night-in with friends and a great alternative to store-bought pizza (ehm ehm, I’m talking about you Domino’s and Pizza Hut).
I decided to keep it relatively light, topping the flatbread “only” with cheese (lots of it), caramelized onions, bacon and sweet potatoes. Of course, feel free to add whichever ingredient you might like, if my recipe feels too light… which it shouldn’t by the way. (I’m not judging you.. ok, maybe a little xD)
I really wanted to bring up the contrast between the sweetness of the potatoes and caramelized onions versus the saltiness of the bacon and cheese. I initially thought of using roasted garlic sweet potatoes but changed my mind eventually to not have too many flavors running around the flatbread.

Cheesy Sweet Potato and Bacon Flatbread

- Flatbread
5g Dry active yeast
240g Water (warm)
2 tablespoons Olive Oil
360g Flour
2 teaspoons Salt
2 tsp Garlic powder
1 teaspoons Dried thyme
- Topping
2 tablespoons Olive oil
300g Sweet potato (peeled and sliced)
2 teaspoons Sugar
20g Unsalted butter (melted)
1 Red onion (thinly sliced)
40g Sour cream
200g Shredded cheese (Mozzarella, Emmental or Gruyere)
2 teaspoons Dried thyme
120g raw Bacon bits
Salt & Pepper
Fresh parsley (optional)
Directions
- In a small bowl add the water and the yeast. Mix and let sit for 5 minutes.
- In a large bowl, add the flour, salt, thyme and garlic. Stir.
- Add in the water/yeast mix and the olive oil. Mix well.
- Once combined, move to a flat surface and work the dough until smooth.
- Oil a large bowl, place the dough, cover and let it rise for 1 hour at room temperature.
- Preheat oven to 200°C
- In a mixing bowl toss oil and sweet potatoes together. Season with salt and pepper and spread onto a baking sheet.
- In a small bowl, mix melted butter, sugar and onions.
- In a baking sheet, spread sweet potatoes on one side and onions on the other. Roast for 20 minutes or until fork tender.
- Cut the dough in half, remove one half and cover the rest.
- Preheat oven to 200°C and oil a round tart pan.
- Flatten and spread the dough into a round shape the size of the tart pan and carefully place it inside.
- Top with cream cheese, salt and pepper and half of the shredded cheese.
- Spread onions, then bacon and sweet potatoes.
- Top with remaining cheese and thyme.
- Bake for about 20 minutes, until the cheese has melted.
- Top with minced parsley (optional) and serve.
