Green Banana Porridge, with Video

Today’s recipe is a breakfast recipe: Green Banana Porridge.

If you are not familiar with porridge (or bouillie, in French), porridge is the common name for a dish eaten for breakfast made of boiled cereals and milk or water.

Its most popular version is oatmeal and as its name suggest, is made with oat. Around the world, under different names, porridge is made with wheat, barley, corn, millet or other starches, such as green bananas.

While porridge is consumed all over the world, green banana porridge is mainly found in the Caribbean and most precisely Haiti and Jamaica. The difference lies in the type of banana used: while in Jamaica the most common banana used for this porridge is regular banana, Haitians would normally use Plantain bananas.

Their techniques are quite similar even though Jamaicans would normally go for the vegan version used by the Rastafari: the would swap the condensed and coconut for water and sugar or for coconut milk, water and sugar.

Another way to make this vegan is using vegan condensed milk instead.

It is important to note that, traditionally, the banana is peeled and then mixed with coconut milk or water: I’m lazy so I mix it in a food processor, feel free to do as you please xD

I like to pair porridge with (more) cinnamon and nuts such as almonds or hazelnut.

Ingredients

  • 3 Green bananas

  • 300g Coconut milk (canned)

  • 400g Water

  • 2 cinnamon sticks

  • 1 teaspoon Vanilla extract

  • ½ teaspoon Himalaya salt

  • ½ teaspoon Nutmeg powder

  • 60g Condensed milk (sweetened)

  • Cinnamon powder (optional)

  • Almond flakes (optional)

Directions

  • Peel, cut and rinse the bananas.
  • In a food processor, mix the bananas and the coconut milk until smooth.
  • In a pot, bring to boil the water and the cinnamon sticks.
  • Stir in the banana mix. Bring to boil and simmer 5 minutes.
  • Add in the vanilla extract, nutmeg and salt and stir.
  • Add in the condensed milk and simmer for 5 minutes.
  • Remove the cinnamon sticks and serve with flaked almonds and cinnamon powder.
