Baked Apples Stuffed with Hazelnut and Amaretti

Today’s recipe is a super easy one: baked stuffed apples!

These serve as the perfect dinner dessert or afternoon snack.

They can be served alone or if you’re really greedy, with a scoop of vanilla or hazelnut ice-cream.

For this recipe, I used Pink Lady apples because I like the crunchiness of the texture, but if you like your steamed/baked apples to be all smooshy and soft, then the Golden ones would probably work better.

I baked my own Amaretti but you can easily buy packaged ones. If you’ve never baked them and want to try it out, you can find the recipe below. The original recipe call for a mix of bitter and sweet (regular) almonds but you can use regular almonds and use a teaspoon of almond extract.

Now that we got that out of the way, let’s talk about the hardest part of the recipe: carving the apples. To be honest, this is the only step of the recipe that requires any form of skills higher than a toddler’s (no offense to the toddlers around the world) but it can compromise the final result if not done correctly.

You want to carve out enough apple pulp to make your stuffing but you do not want to leave in so little that it would crack during the baking process in the oven.

I suggest using an apple pitter, a knife or a spoon.

Get creative with the stuffing: if you don’t like hazelnuts (how dare you?), you can always use macadamia nuts or walnuts. If you don’t like cinnamon or lemons, you can use oranges and ginger instead, and so on.

Baked Apples Stuffed with Hazelnut and Amaretti

Ingredients

  • 4 medium/large Apples

  • 50g Hazelnuts (or Hazelnut powder)

  • 35g Amaretti biscuits (check ingredients below if you want to make them from scratch)

  • Juice of 1 Lemon

  • Zest of 1 Lemon

  • 1 tablespoon Cinnamon

  • 1 tablespoon Honey

  • Amaretti biscuits
  • 100g Sugar

  • 100g Almond

  • 1 teaspoon Almond extract

  • 1 teaspoon Vanilla extract

  • 2 Egg whites

Directions

  • Amaretti biscuits (optional)
  • Preheat oven at 180°
  • Line a baking tray with parchment paper.
  • Beat egg whites until stiff.
  • In a mixer bowl add the almonds, sugar, extract and half the egg whites. Mix well.
  • Add the rest of the egg whites. Mix until smooth
  • Place teaspoons of the dough on the baking tay. Dust with sugar (optional)
  • Bake at 170° for 18 minutes.
  • Stuffed Apples
  • Preheat oven to 190°.
  • Line a baking tray or pan with parchment paper.
  • In a mixer bowl, add in the hazelnuts and the amaretti. Set aside in a bowl.
  • Cut off the top of the apples and set the tops aside.
  • Remove the inside of each apple, making sure not to carve out too much and break the peel.
  • Separate the seeds from the pulp.
  • Add the pulp to the hazelnut-amaretti mix.
  • Add in the cinnamon, zest and lemon juice.
  • Place the apple on the baking tray/sheet.
  • Scoop the stuffing into each apple and cover with the tops.
  • Heat the for 10 seconds in the microwave. Glaze the apples with honey.
  • Cover the bottom of the pan with water.
  • Bake at 180° for 15 minutes covered with aluminum foil and 20 minutes without the foil, until the apples are tender and start bubbling.
