A short backstory: I am not a big fan of fast food, but a few years ago, I spent three months at my Aunt’s house waiting for the start of my new apartment lease. One of my cousin was working at Mc Donald’s at the time and used to bring back leftovers desserts; one in particular caught my attention, the “Brownie Stick“.
This dessert was discontinued the following year and no longer exists today. It was partially made of brownies, as its name suggests, but it also had cookie base and a thick caramel filling at the middle.
I decided to switch a couple things: first, I added hazelnuts (…many hazelnuts) to the batter, moreover, I opted for a peanut butter and honey filling, instead of the caramel one, for more protein.
So that’s how I ended up with my Brownie Cookie Stick!
It is a rather simple dessert to bake, the only to step which needs more attention is the cutting and shaping of the sticks (or sandwiches if you may like). I suggest eating this for breakfast or during tea time slightly warm to better enjoy the taste of the filling.

80g Dusting sugar
3 Eggs (whisked)
1 teaspoon Vanilla extract
Pinch of Salt
50g Flour
30g Hazelnuts and/or Pecans

25g Honey
