More lemons, more pistacchio and more loaf cakes. Doesn’t that sound beautiful?
I mean, you really thought I wasn’t going to find a way to put pistacchio in yet another recipe? You clearly do not know me well enough xD
Today’s recipe is my own little twist to our beloved lemon cake: I added basil and pistacchio and switched to a green honey glaze over the tradition white frosting.
In this recipe I used honey because… I ran out of sugar. *face palm*
Nevertheless, I added the equivalent quantities for sugar as well: just note that, if you were to use sugar instead of honey, you must increase the quantities of Greek yogurt from 120g to 140g.

Lemon Loaf Cake with Pistachio and Basil

- Cake
190g Flour
25g Poppy seeds
1 teaspoon Baking powder
¼ teaspoon Baking soda
½ teaspoon Salt
100g Butter (melted)
75g honey (or 100g sugar)
120g Greek yogurt or Sour cream
3 eggs
Lemon zest of 2 organic lemons
2½ tablespoons Lemon juice
85g Pistacchio
10 Basil leaves
- Frosting (optional)
2 tablespoons Honey
1½ tablespoon Lemon juice
15g Pistacchio
Directions
- Cake
- Preheat oven to 180° degrees.
- In a mixing bowl whisk together flour, poppy seeds, baking powder, baking soda and salt for 20 seconds, set aside.Â
- In a mixer, finely grind the pistachio and basil. Set 15g aside for the glaze.
- Add the pistachio and basil mix to the flour.
- In a separate bowl, add melted butter, sugar, lemon juice, lemon zest. Whish in eggs on at the time.
- Gradually add the flour mix to the wet mix.
- Butter and flour the loaf pan.
- Pour the cake batter into the pan.
- Bake at 170° for 55 minutes, until a toothpick comes out almost clean.
- Remove from oven and allow to cool 5 minutes.
- Remove cake from loaf pan and cover with the honey glaze (instructions below).
- Honey Glaze
- Combine ingredients in a bowl and heat in microwave in 20+10 seconds. Make sure to whisk between intervals.
