This week’s recipe is: Caramelized Onions, Avocado and Smoked Chicken Sandwich.
Yes, a regular-shmegular sandwich… a great one, may I say!
I have sung the praises of smoked chicken in the past, both here (Njama Njama) and on Instagram.
Chicken is good, but smoked chicken is even better. No, seriously, so much flavor, so versatile and so easy to cook. As much as I love seasoning, you really don’t use much, or any when using smoked chicken, its flavor works on its own.
Still, I love a marinade, so yeah… I used honey-mustard lol
I have been low-key obsessed with caramelized onions lately, so expect to see more of it here on the blog (ie: Cajun Shrimp Plantain Cups).
This particular chicken sandwich is not something you’d eat at 4pm, unless you are Italian or Spanish and have dinner no sooner than 9pm. It’s so good, but yeah, it is filling, to say the least.
I use whole-grain, because of the nutritional value, plus I love the taste. Nevertheless, you are free to use whichever kind of bread and Lord knows there is an infinite array of breads now on the market.
Well, without further ado, here’s the recipe.

Caramelized Onions, Avocado and Smoked Chicken Sandwich

Wholegrain Bread (sliced)
1 avocado (sliced)
1 tablespoon Mayonnaise
½ teaspoon Paprika
- Onions
2 tablespoons Unsalted butter
1 tablespoon Vegetable oil
1 Red onion (sliced)
1 tablespoon Sugar
- Chicken
½ tablespoon Vegetable oil
1 tablespoon Dijon Mustard
1 tablespoon Lemongrass paste
2 tablespoons Honey
½ tablespoon Vegetable oil
200g Smoked Chicken (sliced)
- Muchrooms
½ tablespoon Vegetable oil
200g Mushroom (sliced)
Directions
- Melt the butter in a frying pan. Add in the oil. Once hot, add in the onions. Cook until translucent.
- Add in the sugar. Cook until soft. Set aside.
- In a small bowl, mix the mustard, lemongrass paste, honey and ½ tablespoon of oil. Mix well.
- In a larger bowl, add in the smoked chicken and the mustard sauce. Mix well Set aside.
- Heat up ½ tablespoon of oil in a frying pan. Add in the mushroom. Sauté until all the humidity has evaporated. Set aside
- In a small bowl, mix mayonnaise and paprika.
- Heat up ½ tablespoon of oil in a frying pan. Add in the chicken and cook until it starts browning.
- Toast the bread slices in a pan with shredded cheese.
- Layer the mayonnaise, avocado, onion and chicken.
